We recently held a Cultural Food Day at the Just For U Care office where our staff members prepared and shared some fantastic dishes representing a range of cuisines around the world. One of the most popular dishes was our administrator Robyn's Harak Mas Curry (a Sri Lankan beef curry) which she would love to share with our community.
Harak Mas Curry. Serves 8-10 people.
1.5kg stewing beef
3 tablespoons ghee or oil
2 large onions, finely chopped
1 tablespoon finely chopped fresh ginger
3-4 cloves garlic, finely chopped
4 tablespoons Ceylon curry powder
1 teaspoon ground turmeric
2 teaspoons black mustard powder
2 teaspoons salt
1 tablespoon vinegar
2 fresh red chilies, seeded and chopped
3 ripe tomatoes, peeled and chopped
Method
Cut steak into 5cm squares. Heat ghee in saucepan and gently fry onions, ginger and garlic until just beginning to turn golden. Add curry powder, turmeric, mustard seeds and fry over low heat for 2-3 minutes. Add salt and vinegar and stir well. Add steak and fry, stirring to coat meat well. Add chilies and tomatoes, cover pan and simmer on very low heat for about 2 hours. Serve with rice and other accompaniments. If the gravy is too thin when meat is tender, cook over high heat, uncovered until reduced.
